
Sushi wrap / Nori wrap

A different kind of noriwrap
Did you know that, in addition to sushi, you can also make delicious wraps from nori leaves? Once again, an easy way to sneak more vegetables into your menu! Nori wraps are a combination of mineral-rich nori leaves, rice paper, creamy avocado and plenty of fresh produce. The result is a truly delicious snack, perfect as a snack or as a lighter lunch or dinner. If you like sushi, there’s a very good chance you could become a fan of nori wraps. For preparation you will need:
For wraps:
- 4 nori sheets
- 4 rice papers
- 2-3 ripe avocados (mashed with a fork)
- 2 medium carrots (grated)
- ½ long fresh cucumber (thin slices or strips)
- 1 bell pepper (thinly sliced)
- a little water to moisten the rice paper
- salt, pepper and lemon juice (to flavour avocado)
For the sauce:
- 80 g sunflower seeds (pre-soaked)
- 115 ml water
- ½ tsp chilli flakes ½ tsp (you can add more/less)
- salt, pepper (to taste)
- 1-2 lime juice (the acidic component is important here!)
- 1-2 tsp maple syrup or honey to balance the flavours
How to make noriwraps?
First, wash and chop the vegetables and mash the avocado with a fork. Next, place one of the nori leaves on a kitchen surface or a larger chopping board. Next, take a piece of rice paper and dip it in a bowl of water for a few seconds (1-2 seconds is enough!) and place the moistened rice paper on the nori sheet.
Once you have placed the rice paper on the batten sheet, carefully cut out a single slit from the bottom edge to the centre, so that you can fold all the sides together later.(Click here for a tutorial on cutting and folding wraps!)
Divide the nori-rice wrapper into four equal parts and cover with different toppings – add smashed avocado to one part, grated carrot to the second, bell pepper to the third and cucumber slices to the fourth. Then fold everything together and place on a plate. Repeat the process until you have enough ingredients.
To make the sauce, in a blender, blend together the sunflower seeds, lime juice, water, chilli flakes, maple syrup or honey, salt and pepper, previously soaked in water and strained, until smooth and silky. Serve the wraps with the creamy sauce.
NB! Feel free to add anything else you want – like cooked rice, quinoa or millet, hummus, red onion, spinach or whatever else you have on hand.
