Lentils probably originate from Central Asia, being the fruit of an annual plant that has been consumed since prehistoric times. Lentils were one of the first cultivated food crops, spreading from Central Asia to Europe, Africa and India.

Lentils have been a staple in the diets of Estonian peasants since time immemorial. It is thought that lentil cultivation in Estonia really flourished in the 19th century. In some regions of Estonia, lentils were even grown in such abundance that they were used to pay servants. However, most lentil growing was limited mainly to meeting the family’s food needs. There were three main factors that contributed to the development of lentil growing in Estonia. Firstly, unlike other pulses, lentils can grow in poorer and drier soils. Secondly, compared to dried beans and peas, lentils cook more quickly to softness. Thirdly, like all pulses, lentils are a good source of energy and protein, which peasants greatly needed in their diet. Lentils are rich in folic acid and fibre. Lentils also provide potassium, iron and phosphorus, as well as magnesium, zinc, B vitamins and useful copper. Lentils are recommended for people with diabetes and to balance blood sugar levels. Lentils are very low in fat and foods made from them fill the stomach properly as theenergy is released from the lentilsevenly and slowly.

Baking instructions

Place the glass plates and the sauce in layers in the baking dish. Start and finish with the sauce. Bake the lasagne in the oven for 40 minutes at 200 degrees. For best results, it is recommended to cover the lasagne plates with a sufficient amount of sauce.
