
Plant-based chickpea and carrot patties

Juicy carrot patties made from chickpeas
Did you know that you can make delicious patties from vegetables that work perfectly as a main dish, a side to a fresh salad, or even in a healthy burger? The stars of these plant-based patties are chickpeas and carrots. Chickpeas add texture and help the patties hold together, while carrots, combined with herbs, bring flavor and juiciness. If you’re on the lookout for plant-based patties, these are definitely worth trying! They are 100% vegan, gluten-free, and contain no added fats.
Servings: approx. 9 – 12 patties, depending on the size of the patties.

For preparation you need:
- 165 g carrots
- 1 jar canned chickpeas (drained and rinsed)
- 100 g onions
- 95 g champignons
- 2 fresh garlic cloves
- 80 g oat flakes
- 2 teaspoons onion powder
- sea salt (optional, to taste)
- Cayenne pepper (¼-½ tsp or to taste)
- pipart
- 1 tbsp tomato paste
- a dash of lemon juice (½ teaspoon)
How to make chickpea-carrot patties?
Preheat the oven to 180 degrees and prepare the cutlet mixture. To do this, wash, peel and chop the carrot, onion and garlic cloves and place in a food processor. Then drain and rinse the chickpeas under running water and place them in the food processor with the vegetables. Sprinkle in the oatmeal, seasonings and tomato paste and lemon juice. Blend until a smooth, creamy mixture forms. Mash into more or less uniform sized patties and bake in the oven at 180 degrees for 20-30 minutes. Leave to cool slightly and enjoy as desired.
