French salad with green beans, olives and lemon vinaigrette
If you’ve ever thought that eating just salad won’t fill you up, try this French-inspired salad with potatoes and beans — it’s hearty enough to satisfy, yet bursting with freshness. The salad combines nutrient-rich potatoes, flavoursome olives, vitamin-rich green beans and plenty of fresh produce. The cherry on top is a lemon vinaigrette that brings the flavours together. Have fun experimenting!

Preparation time: 25 minutes (if using previously steamed potatoes and beans).

To prepare you will need:
For the salad:
- 600 g steamed baby potatoes, cut in half
- 140 g green beans (steamed)
- 200 g green leaves (romaine lettuce, frillies, carrots, or whatever you like)
- 60 g cherry tomatoes, halved
- 60 g radishes, thinly sliced
- 20 g sliced olives, pitted, vinegar- and oil-free, sliced
- handful of fresh basil, chopped
For lemon vinaigrette:
- 2 tablespoons freshly squeezed lemon juice
- 1,5 teaspoon of honey
- ¼ teaspoon mustard powder
- sea salt (to taste)
How to prepare a salad?
Place the chopped lettuce in the bottom of a plate or bowl and top with sliced olives, halved cherry tomatoes, steamed potato wedges, steamed beans, radish wedges and chopped basil.
For the vinaigrette, mix together the lemon juice, sea salt, mustard powder and honey and pour over the salad.
Enjoy immediately!
