Crispy Potato Salad with Cashew Dressing

Looking for a fresh twist on the classic potato salad? Try this crispy potato salad with cashew dressing! Featuring oven-crisped potato slices and a rich, vegan cashew mayonnaise, this dish is perfect for party tables and casual dinners alike. Both adults and children love it, and even those who aren’t usually salad fans will enjoy this rich, hearty, and flavorful salad. It’s easy to prepare and doesn’t take much time – try it and see for yourself!

Ingredients:

  • 1 kg baby potatoes with skin (or regular potatoes, cut into 4-6 cubes)
  • 2 tsp coconut oil
  • 230 g fresh cucumber
  • 35 g red onion
  • 20 g fresh dill
  • 1 clove of fresh garlic
  • 130 g cashews (soaked and drained)
  • 36 ml freshly squeezed lemon juice
  • 150 ml water
  • Sea salt (to taste)
  • A drop of maple syrup (to taste)

 

How to Make Crispy Potato Salad with Cashew Dressing:

1. Prepare the Potatoes:
  • Preheat your oven to 200°C (392°F). Line a baking sheet with parchment paper and set it aside.
  • Wash and, if necessary, cut the potatoes. Steam them until tender.
  • Once the potatoes are ready, gently place them on the prepared baking sheet, ensuring there is some space between each potato.
  • Flatten each potato using the bottom of a glass. If the potatoes stick to the glass, use a small piece of parchment paper between the potato and the glass to prevent sticking.
  • Brush the flattened potatoes with coconut oil and sprinkle with a bit of sea salt.
  • Bake in the oven for about 15-20 minutes, or until the potatoes are crispy. Set them aside to cool.
2. Prepare the Salad:
  • Dice the cucumber and red onion, and finely chop the dill. Place them in a large bowl where you will mix the salad later.
3. Make the Dressing:
  • In a blender, combine the soaked and drained cashews, lemon juice, water, garlic, sea salt, and maple syrup. Blend until smooth.
  • Pour the dressing into the bowl with the chopped cucumber, onion, and dill. Mix well.
4. Assemble the Salad:
  • Gently fold in the crispy potato slices into the salad mixture. Mix carefully to avoid breaking the potatoes.
  • Serve immediately and enjoy!
Notes:
  • The salad is best enjoyed fresh to maintain the crispiness of the potatoes.
  • You can adjust the seasoning to your taste preference.
