To prepare you need:
- 280 g almond flour
- 80 g potato starch
- 48 g coconut sugar
- 2,5 teaspoons aluminium-free baking powder
- ¼ teaspoon salt (optional)
- 280 g ripe bananas (mashed)
How to make banana bread?
In a bowl, mix together all the dry ingredients: almond flour, potato starch, coconut sugar, salt (if using) and baking powder. In another bowl, mash the bananas with a hand mixer or fork (you can also use a blender). Mix the mashed bananas into the dry ingredients and pour into a loaf tin lined with baking paper (if you are using a silicone loaf tin, no baking paper is needed). Bake the banana bread in a 180°C oven for 42-47 minutes. Then take the banana bread out of the oven and leave it to ‘rest’ and cool for at least 20 minutes. Then slice and enjoy!
