It’s most probable that lentils originate from Central Asia. Lentil is a legume; it is an annual plant grown for its lens-shaped edible seeds, also called lentils, that have been consumed since prehistoric times. Lentils were one of the first food crops to spread from Central Asia to Europe, Africa and India. 
Lentils were a staple in the diets of Estonian peasants from early on. It is thought that lentil cultivation in Estonia really flourished in the 19th century. In some regions of Estonia, lentils were even grown in such abundance that they were used to pay servants. However, the majority of lentil cultivation was limited mainly to meeting the family’s food needs. There were three main factors that supported the cultivation of lentils in Estonia. Firstly, unlike other legumes, lentils can grow in poorer and drier soils. Secondly, compared to dried beans and peas, lentils cook soft more quickly. Thirdly, like all legumes, lentils are high in protein, which was often scarce in the diet of peasants, especially in the old days.
Lentils have similar characteristics to beans. They are good sources of protein. Lentils are rich in folic acid and fibre. Lentils also contain potassium, iron and phosphorus, as well as magnesium, zinc, B vitamins and copper. Because lentils are rich in fibre, they help to control cholesterol levels. Lentils are also recommended for people with diabetes and to balance blood sugar levels. Red lentils are liter-shaped legumes that are very rich in iron and easy to digest. Lentils are very low in fat and calories, and foods made from them fill you up for a longer time, as the energy from the lentils is released slowly.

Baking instructions
Take 80 g of pasta per person. For every 80 g of pasta, add 1 litre of water, bring to the boil. Add the pasta and salt, if desired, and simmer for 12 minutes until the pasta is as soft as desired. Stir occasionally during cooking. Drain the pasta and serve.
