  • 55 g gluten-free oats
  • 155 g almonds
  • 45 g shredded coconut
  • 10 large medjool dates or 24 regular soft dates (pitted)
  • Pinch of salt
For the Filling:
  • 210 g cashews
  • 95 g coconut cream
  • Juice of 3 lemons
  • Zest of 2 lemons (grate carefully to avoid the white pith, which is bitter)
  • 80 g maple syrup or honey
  • Optional: a bit of natural vanilla extract
  • Small baking dish (23 x 17 cm used in this recipe)

Instructions:

1. Prepare the Base:
  • Blend the base ingredients in a food processor until well combined. Press the mixture into the bottom of a parchment-lined baking dish. Note: The base mixture may seem crumbly at first, but it will come together with patience. A food processor works best for this step; a blender may not be as effective.
2. Prepare the Filling:
  • Blend the filling ingredients in a food processor or blender until smooth and creamy. Pour the filling over the base layer.
3. Chill:
  • Place the dish in the freezer until the bars are completely set and firm.
4. Storage:
  • Store the bars in an airtight container in the freezer.
